Some are saying that it's the David Benoit version, but I don't think it's been confirmed.

I've listened to several versions of the song this morning. Benoit's is close enough to me where it may be a mix of his. To anyone who is interested, a really good piano version is Michael Crawford's from Phantom of the Opera.
