Mexican Music

I am planning a full gourmet meal with a mexican Theme. I don't know much about mexican music, but i need some to play during the meal. I really want something elegant, maybe classical music with a mexican sound, really anything that can be played softly with a mexican sound to it would be perfect. thanks.
 
Hey, i dont know about mexican, but i know some Flemenco and rumba. check out Jesse Cook, he has a lot of instrumelntals that a really good. and theres Gipsy Kings of course. and Rodrigo y Gabriela have some good stuff, its a little faster paced though.

You might check out the Chocolat soundtrack by Rachel Portman.
It's not necessairly Mexican, but the music throughout the movie definitely has a nice latin flair to it.
The song "Caravan" is great.

Also, Gotan Project has some great latin music (with a nice sexy edge to it, as well).
